Special Chinese Fried Rice


"Special Chinese Fried Rice"

  Ingredients: 
 Cooked rice800 gm
 Capsicum1 Green
 Capsicum1 Red
 Bamboo Shoots100 gm
 Eggs2 Medium
 Onions (finely chopped)2 Spring
 Shredded Chicken? cup
 Salt2 tsp
 Oil4 tbsp
 Soy Sauce1 tbsp

Preparation:

  1. Cut the green and red peppers and the bamboo shoots into small cubes;
  2. Lightly beat the eggs with about half of the spring onions and a pinch of salt;.
  3. Heat about 2 tbsp of oil in a kadai (Indian wok);
  4. Add the beaten eggs and scramble until set. Keep itaside;
  5. Cook chicken with some water, pepper powder and salt until it becomes tender. Keep it aside;
  6. Heat the remaining oil;
  7. Add the rest of the spring onions followed by all the vegetables and chicken and stir-fry, until each piece is covered with oil;
  8. Add the cooked rice along with salt and stir to separate each grain of rice;
  9. Finally, add the soy sauce and scrambled eggs; and,
  10. Mix everything together.

*Serve hot.
