Special Chinese Fried Rice

"Special Chinese Fried Rice"

| | Cooked rice | 800 gm |
| | Capsicum | 1 Green |
| | Capsicum | 1 Red |
| | Bamboo Shoots | 100 gm |
| | Eggs | 2 Medium |
| | Onions (finely chopped) | 2 Spring |
| | Shredded Chicken | ? cup |
| | Salt | 2 tsp |
| | Oil | 4 tbsp |
| | Soy Sauce | 1 tbsp |
Preparation:
- Cut the green and red peppers and the bamboo shoots into small cubes;
- Lightly beat the eggs with about half of the spring onions and a pinch of salt;.
- Heat about 2 tbsp of oil in a kadai (Indian wok);
- Add the beaten eggs and scramble until set. Keep itaside;
- Cook chicken with some water, pepper powder and salt until it becomes tender. Keep it aside;
- Heat the remaining oil;
- Add the rest of the spring onions followed by all the vegetables and chicken and stir-fry, until each piece is covered with oil;
- Add the cooked rice along with salt and stir to separate each grain of rice;
- Finally, add the soy sauce and scrambled eggs; and,
- Mix everything together.
*Serve hot.
